Made lots of delicious Tex-Mex small bits….
Fresno chili cheese poppers

Recently I became a big fan of Spaghetti squash, its a healthy alternative to regular pasta.
I was really skeptical about it and about how would it taste with pasta sauce, and I always wondered what was the rave about it….but I became a believer once I had a taste of it.
Trying to have a healthy lifestyle made me try and experiment with food that I never thought of eating, but I been feeling good about choosing the healthier food for me and my family…

The first time I tried spaghetti squash was the frozen kind that I bought at the grocery store but I thought to my self it would taste a whole lot better if I make it at home and thats when I became a big fan of this delicious healthy food !

This is how I made them
Preheat oven to 440
2 large spaghetti squash
Healthy cooking spray
1/4 tsp sea salt
1/4 tsp black pepper
Wash and dry the squash.
Line a cookie sheet with aluminum paper (easy clean up), spray with cooking spray and set aside.
Cut the washed spaghetti squash in half, scope out the seeds and discard.
Spray the squash with cooking spray and sprinkle the top with salt and pepper.
Bake face down for 40-55 minuets..
Turn face up and bake for additional 10 minuets, I like them to have a chard top it adds smoky taste to the dish!
After baking let it cool for 15-20 minuets.
With a fork scrap out the inside of the squash to a bowl and you will have a delicious spaghetti ready to devour…

I packed the squash in small freezer bags to keep on hand when I need it, cheaper and healthier than the store bought version!
Enjoy!

I made these babies yesterday, these are made without flour or butter, I used the protein powder shake that is sold at the Health stores….

Everyone loves this cake, it’s so chocolaty and moist.. Continue reading

This dish bring so many childhood memories, it was sold by street vendors back home! We used to buy it and munch on it on the way home from school.

My husband misses eating this delectable treat and i been promising him to make some for him for a while, so today I made some and it was amazing.

Last week I made him the Lupini Beans and it was delicious as well.

It’s easy to make and delicious to eat.

1 bag of large dry fava beans or Lupini beans about 1 LB and 8 Oz
6-8 cups of cold water
1/2 tbsp. of cumin
1/2 tbsp. sea salt
2 tbsp. of chopped fresh flat leaves parsley.
2 tsps. baking powder
Place the beans in to a large pot rinse well and discard of the water.
Add 6-8 cups of cold water and let stand on the counter covered over night!
Do not mix the beans if you are making both kinds, use two different pots for each beans and follow the rest of the recipe!
Next day, place the pot covered on high heat and bring to boil, lower the heat to simmer, stir in the baking powder, cover and simmer for 35-40 minutes or until fork tinder.
Drain the beans and wash with cold water for two minutes to stop the cooking process, drain completely.
Add Salt and Cumin and mix well, do not add Cumin to the Lupini beans as it wont work with it, sprinkle with fresh chopped parsley and serve.
Pack the left over in airtight container and save in the refrigerator for about a week if they last that long!
Enjoy!!
