Shrimp and Scallop Scampi
When our younger son Bilal was over our house few days ago I made this delicious dish for dinner for us to enjoy and because I knew he would loves it…

It is a simple and easy dinner to prepare in no time and on a short notice when company arrives… And it is a light, lemony and garlicy dish with an amazing aroma and flavor.
Recipe:
1 bag 12 oz. frozen Scallops
3 bags 12 oz. each of frozen, fully cooked large size shrimps
7 cloves of minced garlic
1/2 tbsp. sea salt or to taste
1/2 tbsp. black pepper
Fresh juice of two large lemons
1 tbsp. crushed hot red pepper flakes
1/4 tsp. cayenne pepper
1 cup of water or seafood broth or clam juice
2 tbsp. olive oil
1 tbsp. unsalted butter

Rinse shrimps and scallops in separate colanders with cold water until are both completely defrosted, set the shrimps aside.

In a large saute pan, heat olive oil and butter.. cook the scallops for one to two minutes on each side… the cooking time for the scallops depends on the size of them… remove and set side.
Grate the garlic with a grater and add to the pan and cook for a minute.

Add all the spices, red pepper flakes and salt; cook for one minute

Add water or clam juice, lemon juice and cook for two minutes.

Add the shrimps and stir to heat, don’t over cook the shrimp its already cooked … add scallops to the pan and stir until both combined and covered with the broth…
