Every home you visit or bakery you walk by the aroma of butter and Ajwa (date paste) is in the air.
Ajwa is grinded dates that mixed with nutmeg and all spice; it is delicious in cakes and cookies.
I started writing down the recipe while I was on the phone with her, I gave her the ingredient and the instructions on how to prepare the dish. Bulgur (the fine grade) is famously used in Taboli dishes but it is delish when its made as pilaf. a refreshing change from regular rice or brown rice but It will require a lot of flavor added to it, spices and flavored stock, it is very bland on its on. The chicken dish turned out delish also, my own created mix of spices worked beautifully in both the Chicken and the Bulgur dishes, I will try the chicken dish again with one less vegetable and see the difference. over all both dishes were successful tonight.Chicken and cabbage
she did not have any coarse Bulgur on hand so she made brown rice instead. Coarse Bulgur is what I wanted to go with this chicken dish.



Made roasted salmon with olive oil, salt, black pepper, and chili powder. It was amazing!
Paired with, roasted cauliflower, and broccoli.
In addition, I prepared a healthy collard green, with olive oil, minced garlic, 2 tbsp. butter, and vegetable stock and lots of nutmeg.
At the end of the day, it was successful and the whole family fed and happy.
.1 cup of chopped walnut
.2 cups All Purpose flour
.1 Cup Sugar Substitutes or regular sugar
.2 Tsp. Baking Powder
.1 Tsp. Baking Soda
.3/4 Cup Buttermilk
.1/4 Cup Vegetable oil
.2 Eggs
.1/8 Tsp. Salt
.1/8 Tsp. Nutmeg
.1/8 Tsp. Cinnamon
.2 Medium Smashed Banana
.1 Tbsp. Vanilla extract
Pre heat oven to 350
In a stand mixer add oil and sugar substitutes and mix well for few second, add eggs one at a time and beat for a minute or two, add vanilla.
In a separate bowl, sift flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
Add to the eggs mixture alternating with the buttermilk, starting and ending with the flour mixture; gently stir in the smashed banana and Walnut.
Grease a loaf pan and cover the bottom with parchment paper.
Bake for 55 min or until toothpick comes out clean.
Cool completely before serving.

In a stand mixer add sugar substitutes and butter, mix well for few second, add eggs one at a time and beat for a minute or two, add vanilla.
In a separate bowl, sift flour, baking powder, salt, nutmeg and cinnamon.
Add buttermilk to the eggs mixture alternating with the dry ingredient, starting and ending with the flour mixture; gently stir in the smashed banana and Walnut.
Add the batter to a greased loaf pan with the bottom covered with parchment paper.
Bake for 55-60 min or until toothpick comes out clean.
Cool completely before serving.

I love making my own pesto at home, I love the taste of fresh basil especially the one I grow in my garden…
This is hardly a recipe but I wanted to share it.

1 cup fresh Mint
2 cups fresh Basil
1/4 cup olive oil
1 Tsps. sea Salt
1 Tsps. black Pepper
1 cup of mixed toasted Pecan, Walnuts and pine nuts
1/2 cup parmesan chesses
1 tsp. Lime Juice
2 tbsp. Lemon juice
In a food processer bowl add all ingredient except the olive oil, pulse for few times to mix..with the food processer running drizzle the olive oil until all combined.
I use this pesto as a pizza base, or a salad dressing it is delicious.

This homemade healthy dough is perfect for Pizza or fresh homemade bread.
.3 Cups hot water
.3 Packet yeast
.3 Tbsp. Salt
.1 Tbsp. sugar
.7 1/4 cup Whole Wheat Flour
.2 Tbsp. Olive Oil
In a stand mixer bowl add water, yeast and sugar and let it stand for about 5 minutes or until foamy.
Attach beater attachment , add 7 cups flour and salt and mix well, add the last 1/4 cup of flour a little at a time until the dough comes together and pulls away from the bowl, remove beater attachment and replace it with the dough hook, let the mixer run one medium low speed for about 5 minutes to work the dough.
Add olive oil and coat the dough, cover and let it rest for 1-2 hours.
This recipe makes about 4-5 pizza.
It freezes well too, divide the dough in 4 or 5 portions in separate zip top bags and store in the freezer up to 3 months.
.1 Can 15 Oz Tomato sauce
.1 can 14.5 Oz fire roasted diced Tomato
.1 bag 12 Oz whole grain whole wheat Penne Rigato
.1 Tbsp. salt
.1 Tbsp. black pepper
.3 cloves minced Garlic
.1 medium Onion diced
.12 Oz Beef chili cut size
.1 Tsps. dried Basil
.1/4 fat-free Sour Cream
.1/4 cup parmesan cheeses
.3 Tbsp. Olive oil
.4 Tbsp. water
fresh basil to garnish
Cook Penne according to the instructions on the back.
On medium heat in a large skillet heat olive oil, add onion and salt cook until the onion is soft, add garlic and cook for few seconds, add meat and cook for 5 minutes or until fully cooked.
Add diced tomato, tomato sauce, black pepper, water, and basil and stir for few minutes.
Lower heat and cook until sauce comes together, it will take about 7-9 minutes, add sour cream and cool for additional 2 minutes.
Drain the penne add to the sauce and cook together for few seconds, add parmesan cheeses, chopped basil and serve.
