Today I realized that I have saved a lot of banana chips from the so called tropical mix nuts and tropical fruit bags that we buy from the health store, every time I buy a bag I realize more and more that they are just full of banana chips and hardly any mixed nuts or any tropical fruits…
I had a recipe in mind that I wanted to create and try for dinner tonight, I called a friend and said would you like to be my tester? she said yes, I would love too (she loves my food) 🙂
I started writing down the recipe while I was on the phone with her, I gave her the ingredient and the instructions on how to prepare the dish.
she did not have any coarse Bulgur on hand so she made brown rice instead. Coarse Bulgur is what I wanted to go with this chicken dish.
Bulgur (the fine grade) is famously used in Taboli dishes but it is delish when its made as pilaf. a refreshing change from regular rice or brown rice but It will require a lot of flavor added to it, spices and flavored stock, it is very bland on its on.
The chicken dish turned out delish also, my own created mix of spices worked beautifully in both the Chicken and the Bulgur dishes, I will try the chicken dish again with one less vegetable and see the difference. over all both dishes were successful tonight.
This homemade healthy dough is perfect for Pizza or fresh homemade bread.
.3 Cups hot water
.3 Packet yeast
.3 Tbsp. Salt
.1 Tbsp. sugar
.7 1/4 cup Whole Wheat Flour
.2 Tbsp. Olive Oil
In a stand mixer bowl add water, yeast and sugar and let it stand for about 5 minutes or until foamy.
Attach beater attachment , add 7 cups flour and salt and mix well, add the last 1/4 cup of flour a little at a time until the dough comes together and pulls away from the bowl, remove beater attachment and replace it with the dough hook, let the mixer run one medium low speed for about 5 minutes to work the dough.
Add olive oil and coat the dough, cover and let it rest for 1-2 hours.
This recipe makes about 4-5 pizza.
It freezes well too, divide the dough in 4 or 5 portions in separate zip top bags and store in the freezer up to 3 months.
This comforting dish literally did not take more than 30 minutes to make, its easy for any night of the week after a long day at work.
.1 Can 15 Oz Tomato sauce
.1 can 14.5 Oz fire roasted diced Tomato
.1 bag 12 Oz whole grain whole wheat Penne Rigato
.1 Tbsp. salt
.1 Tbsp. black pepper
.3 cloves minced Garlic
.1 medium Onion diced
.12 Oz Beef chili cut size
.1 Tsps. dried Basil
.1/4 fat-free Sour Cream
.1/4 cup parmesan cheeses
.3 Tbsp. Olive oil
.4 Tbsp. water
fresh basil to garnish
Cook Penne according to the instructions on the back.
On medium heat in a large skillet heat olive oil, add onion and salt cook until the onion is soft, add garlic and cook for few seconds, add meat and cook for 5 minutes or until fully cooked.
Add diced tomato, tomato sauce, black pepper, water, and basil and stir for few minutes.
Lower heat and cook until sauce comes together, it will take about 7-9 minutes, add sour cream and cool for additional 2 minutes.
Drain the penne add to the sauce and cook together for few seconds, add parmesan cheeses, chopped basil and serve.
