This dish so comforting and stick to your rips kind of soup doing winter time…

Healthy homemade soup in no time and also freezes really well by dividing it in to portions in freezer bags and lay flat in the freezer.

1 large onion chopped

1/2 cup long grain rice

1 1/2 Tbsp. cumin

1  Tbsp. salt

14 cups of beef stock or 16 cups of water and two TBS of better than bouillon beef flavor paste

4 tbsp. olive oil

2 tbsp. margarine

1/2 Tbsp. black pepper

1 Lemon Juice or Lime Juice or about 4 TBS and extra to serve with the soup.

In a large saucepan sauté onion in olive oil and margarine, add salt, black pepper, cumin and cook until soft and light brown.

Add the remaining ingredient except the lemon juice and bring to boil, reduce heat to low and simmer part covered until the lentil and the rice fully cooked, about 30-35 minutes.

If the soup seems too thick; add hot water a cup at a time until you reach the consistency you desire. Add the lemon juice and stir.

Served with; toasted pita bread, a squeeze of fresh lemon juice, sliced radishes and green onion.

I came up with this recipe when I had extra nacho cheese and I did not want it to go to waste.

5 Cups dry elbow macaroni

1 Tbsp. Better then bouillon beef base

1 LB ground lean beef

1/2 Tbsp.. Hot Chili powder

1/2 Tbsp. Salt

1/2 Tbsp. black pepper

1 cup of sour cream

3 cups of whole milk

2 cups of Nacho Cheese

2 Tbsp. olive oil

1 Cup Shredded Mozzarella cheese

2 Tbsp. Margarine

Cook elbow macaroni in boiling water for 7-8 min or until fully cooked.

In a large sauce pan on medium heat sauté the meat with olive oil until its fully cooked, add Chili powder, salt, black pepper and better than bullion paste cook for 1 minutes, add milk, butter, both cheeses and stir until all melted, add Elbow Macaroni, butter and sour cream, stir together until well combined.

This dish is one of my favorite dishes to make and eat, full of cheeses and flavor.
It is easy to make for weeknight dinners, only 30 minutes and dinner on the table.

Preheat oven to 400

5 cups whole milk

2 bags 12 oz vegetable Penne rigate

1 LB ground beef

1 can 14.5 fire roasted diced tomato

1 Tbsp. salt

1 Tbsp. black pepper

1 cup fresh shredded parmesan cheese

1/2 cup flour

3 cups of shredded mozzarella cheese

4 Tbsp. butter divided

3 Tbsp. olive oil divided

½ tsp nutmeg

1 tsp crushed pepper (hot)

Cook the Penne according to the package directions.

In a saucepan, cook beef with 1 Tbsp. butter and 1 Tbsp. olive oil, salt, black pepper and cook until the meat fully cooked. Remove and replace in a backing pan and set a side.

Add the remaining butter and oil in the same saucepan you cooked the meat in, let the butter melt and add the flour and cook until it become paste, add the milk and whisk until its thick. Add half of the cheese, nutmeg, crushed pepper, and mix well until the cheese is melted.

Combine the meat, cooked penne and the cheese sauce in the baking pan and top with the remaining cheese, bake for 25 min or until the sauce is thick and the cheese is golden.

Brown Rice

This is the first time I make Brown Rice and I think I will be making it a lot from now on, very testy and healthy.Brown Rice

4 Cups of Brown Basmati rice
9 Cups of Homemade Chicken stock
1 TBS olive oil
1 TBS butter

In a large non-stick pot add olive oil, butter, rice and toast for two minutes, add Chicken stock and bring to boil, reduce to simmer until the rice fully cooked. It will take about 45 minutes.

This soup does not need any introductions, so here is the recipe!

.3 Cups Cooked Chicken cut to bite size

.1 large Onion finally chopped

.3 Glove of Garlic minced

.1 Tbsp. Salt

.1/2 Tbsp. Black Pepper

.10 Cups of water or chicken stock

.15 Corn Tortilla cut to strips

.1/2 Chili Paper

.1 TBS Maggie seasoning

.1/4 Cup lime juice

.1/2 Tbsp. Cumin powder

.1/2 Tbsp. Coriander powder

.1 Can 14.5 oz. chopped tomato

.4 Tbsp. Chopped fresh cilantro

.2 Tbsp. Butter

.1 Tbsp. Olive oil

In a large pot add butter, olive oil, onion, black pepper, salt, and saute until its soft, add garlic and cook for 1-2 minutes.

Add Cooked Chicken and the rest of the ingredient except Tortilla, lime juice and Cilantro. Bring to boil, reduce heat, and let it simmer for 15-20 minutes.

Add fresh Cilantro, lime juice and cut up Tortillas and cook for 2 minutes.

Serve with sour cream and avocado. Enjoy!

This recipe is easer to make than going for a Chinese takeout.

.6 Cups of Chicken white and dark meat cut to bite size

.1 Jar of Teriyaki low sodium paste and glaze sauce

.1 Tsps. Worcestershire sauce

.1 Tbsp. Sesame Seeds toasted

.1 Medium Onion thinly sliced

.1 Tbsp. Fresh Ginger grated

.1 Tbsp. Soy Sauce

.3 Cloves Minced Garlic

.1 Tsp. Sesame Oil

.3 Green Onion Chopped

.1/2 Tbsp. Chopped Fresh Thyme

.Juice of one Lime

.2 Tbsp. vegetable oil

.2 Tbsp. Butter

.1 Tbsp. Black Pepper

.2 Tbsp. Chopped Fresh Cilantro

.1 Tbsp. Maggi Seasoning

In a large skillet add vegetable oil, butter and onion, sauté until soften, add chicken and cook for 20 minutes or until fully cooked, add the rest of ingredient but reserve half the green onion and half the chopped cilantro, cook for 5 minute until the sauce is little thick.

Garnish with the reserved fresh cilantro and chopped green onion.
Serve with White Rice or Brown Rice.

Spicy Chicken

Everyone need a few days off from cooking red meat and Chicken is a healthier alternative.
I wanted to try a new spicy dish so I came up with one…

2 lb. boneless, skinless chicken legs and thighs cut up bite sizes

1 Tbsp. paprika

1 Tbsp. black pepper

1 Tbsp. Salt

1 Tbsp. Hot chili powder

1 Tbsp. Coriander powder

1 Tbsp. Cumin powder

5 Tbsp. olive oil

1 Large onion thinly sliced

A night before add all the spices and 2 TBS olive oil to the chicken and store in storage bag in a bowl and refrigerate overnight.

In big skillet over medium heat, heat the remaining 3TBS of olive oil sauté the onion until golden add the chicken cook well, it will take about 10-15 minutes.

This recipe is the best to serve as burrito or served over rice.

The best thing is use home made chicken stock when you can and making it is so easy.

stock

.8 pieces of mixed chicken legs and thighs, bone and skin in.

.9 cups of cold water

.1 yellow onion sliced

.8 sprig of parsley

.8 sprig of fresh dill

.12 black peppercorn

.1 carrot cut in half

.1 Tbsp. salt

.2 sprig of fresh rosemary

On high heat bring to boil about 20 min, lower the heat and simmer for two hours, let it cool completely, strain and pack the stock in quart plastic container, freeze up to six months.

Tip
Use the chicken for, chicken salad, soup or chicken pizza if not shred it, discard bones, skin and freeze it in zip bags until you need it.
