Coleslaw
I adore coleslaw but I don’t like it from the store where its already mixed and been setting in a container in the store cooler for few days or weeks sometimes, or from some of the restaurants for that matter…
They are fully loaded with sugar and mayonnaise…I don’t care for these ingredients when I am trying to eat healthy and light…especially when I am already having a rich hearty dish for dinner, I need it a lighter and healthier side dish that night…
Load up on the salad and easy on the meat, that is what I like…
I love making my own coleslaw at home from scratch, its really easy, delicious, creamy and light dish to prepare… I also like the fresh ingredients that I use…
I used to buy the ready made bags from the store, keep them in the fridge until I am ready to make the salad, but guess what and I am sure a lot of us go through this! you buy the bags and when you are ready to make it the bag need to be tossed in the trash!!
I started buying two heads of cabbage, wrap them well with plastic wrap, keep them in the fridge! when I am ready to make the salad I cut what I need and store the rest very well wrapped in the fridge…
Making sure to not use the first two layers, I peel them and toss them away…
1/4 head of white cabbage thinly sliced or shredded
1/2 head of red cabbage thinly sliced or shredded
2 tbsp. olive oil
3 garlic cloves minced
1/4 tbsp. sea salt or to taste
1 cup cilantro leaves
1 tsp. black pepper
1/4 tsp. cumin
1/2 cup buttermilk
3/4 cup fat free yogurt base salad dressing. I used ranch flavor.
1/2 tsp. celery salt
1/2 cup apple cider vinegar
Add the shredded or sliced cabbage in to a large mixing bowl.
Add the rest of the ingredients in to a separate bowl and mix well.
Add to the cabbage and mix well until all combined, taste for salt and add if needed.
Cover and chill for about 20-30 minutes for all the flavors to develop.
Serve with anything BBQ, grilled fish or with grilled chicken.
