This delicious tart was inspired by the mini fruit tart I received from my son and his wife when they came over few days before mother’s day to visit and celebrate it early, they both had to work on mother’s day and they were not going to be able to join the rest of the family on that day…

I loved the tart they brought me… so light، yummy and full of fresh fruit….There was a surprise inside of the tart when I took a bite of it, it had a thick layer of chocolate melted on top of the crust and a thick layer of fresh whip cream…It was amazingly delicious.

I loved the tart so much that I wanted more of it and I knew it was really easy to make it at home, so I recreate it for mother’s day celebration for everyone to enjoy and of course to satisfy my craving for more.

Honestly I am not a chocolate lover!! The horror right!!

I love baking and creating desert with chocolate though because my kids are chocolate lovers and they don’t understand why I don’t like it, especially chocolate ice cream, its not my favorite flavor at all!! I prefer everything vanilla…

For my homemade tart I made the crust with my sugar cookie dough recipe and I choose a delicious variety of my favorite fresh fruits to top it with..

Preheat oven to 325′ F (163 C)

1 recipe of sugar cookie dough Sugar Cookies-Sugar Free

2 cups fresh pineapple cut into thin medium size pieces

2 cups fresh strawberry cut into thin pieces

2 cups fresh kiwi cut into thin pieces

1 cup fresh blackberries

1 cup fresh blueberries

1 cup fresh raspberries

1 cup sugar free canned peaches

2 cups freshly whipped whip cream

2 cups melted bitter or semi sweet chocolate

1 tsp. coconut oil

With floured fingers, spread the sugar cookie dough into a tart pan with removable bottom.

Spread the dough all the way up to cover the edges.

Cocolate tart

Bake for 15-18 minutes or until golden brown

Cool in the pan for 1 hour

Chop the chocolate into small pieces.

Melt the chocolate in a heat proof bowl over double broiler with coconut oil.

Stir to mix, cool for 3-5 minutes before brushing it onto the crust.

With a pastry brush, brush the melted chocolate all over the crust including the sides….cool in the fridge for 30 minutes.

Spread the whipped cream all over the chocolate.

Arrange the fruit to your liking.

Now look at this gorgeous and delicious tart.. it is almost too beautiful to eat! I did say almost 🙂
