Tonight I made a delicious, flavorful and healthy chicken soup for dinner, this recipe is perfect for everyone especially if you are on a healthy lifestyle journey!

I know the list of ingredients is long but i am sure everyone has them in their kitchen!

2-3 LB boneless skinless chicken thighs cut up in to bite size and fat is completely removed

6-8 cups of water

1 cup chopped celery

1 cup cherry tomatoes

3 bay leaves

1 cinnamon stick

1 tsp black pepper

1 tsp chili powder

1 tsp ground coriander

1/3 tsp ground cloves

2 tbsp low sodium chicken bouillon base

1 tbsp garlic powder

1 cup diced onion

1 cup green bell pepper diced

1/2 tsp ground sage

1 tbsp grated fresh ginger

1/2 tsp ground turmeric

1/2 tbsp ground pink sea salt or adjust to taste

Juice of 1 lemon

1 cup of chopped cilantro

Add all the ingredients in to a large stockpot except the cilantro, bring to boil…skim off the white foam from the top so you would have a clear broth at the end…

Reduce the heat to low, cover and simmer for about 25-30 minuets.

Add cilantro and serve with extra lemon juice..
