liver

I know most people wont even think of cooking liver, most would think its not appetizing or taste funny or weird, granted beef Liver has a distinct flavor, but it has to be cooked the correct way with the correct spices, or it will taste funny or unpleasant.

This recipe was made hundreds of times by my mom growing up, so I become customs to appreciate the delicacy of Beef Liver.

So with this recipe let me prove you wrong 🙂

3 LB Fresh Beef Liver, cut to 1 inch pieces  (about 3 small containers)

4 Tbsp. Olive Oil

2 Tbsp. Butter

1 Large Onion chopped

8 Cloves Garlic minced

1/2 Tbsp. Cumin powder

1/4 Tbsp. Salt

1/2 Tbsp. Black Pepper

1/4 Tbsp. Mild Curry Powder

Juice of fresh lemon (optional)

In plastic vegetable strainer wash liver after cutting it, let the water drain and set a side in the strainer to make sure all the water completely drained.

onion

In a large skillet on high heat, add butter, olive oil and onion, add salt and black pepper and sauté onion until golden brown, add garlic and sauté for few seconds.

Add cumin, curry powder and cook for few seconds, add liver and cook for 10 minutes or until fully cooked without over cooking it or it will be rubbery.

Serve with fresh lemon juice or with Middle Eastern salad, I will post the recipe later on.
